Creamy Chicken Stew by Kayla

Steps

  1. Add olive oil to the pan, cook chicken breasts over medium heat, season with salt and pepper

  2. Chop celery, carrots and potatoes into bite sized pieces as desired and dice onion

  3. Melt butter in pot over medium heat

  4. Add celery, carrots, and onion and cook until onion is translucent

  5. Mince garlic into pot and cook until fragrant

  6. Deglaze the pot with white wine, let simmer

  7. Add chicken broth and potatoes to pot and bring to a boil

  8. Stir in Italian seasoning, paprika, thyme, rosemary, salt and pepper

  9. Reduce heat and simmer until potatoes are fork tender, 15-20 minutes

  10. Stir in 1 cup of heavy whipping cream, mix other cup with corn starch and remove lumps before adding to pot

  11. Cut chicken into bite sized pieces and add to pot

  12. Bring stew to boil for 5 minutes, stirring often until thick
