Steps

  1. Start Botan Rice.

  2. In a medium bowl, combine seasoning packet and pineapple chunks.

  3. Add white vinegar, water, and soy sauce.

  4. Dice red bell pepper and chop carrots.

  5. Cut chicken into bite-size chunks.

  6. Preheat wok on medium with olive oil.

  7. Stir-fry chicken and season with salt and pepper.

  8. Stir in red bell pepper and carrots.

  9. Mix in seasoning mixture.

  10. Add water chestnuts.

  11. Simmer for 10 minutes.

  12. Serve over rice.
